Called "pub fusion" by its chefs, every brunch, lunch, and dinner is an exercise in upscale imagination. Even down-home staples, such as shrimp and grits and fried green tomato sandwiches, brim with thoughtful, unexpected details: candied bacon crumbles and chipotle cream sauce grace the grits, while that tomato sandwich is served on a housemade "doissant"—that's half donut, half croissant. A similarly inventive brand of sophistication pervades the pork chop schnitzel (served with béarnaise sauce), the blackened, flash-seared ahi tuna (dressed with a blackberry-balsamic vinaigrette), and the Barrel burger (served on a pretzel bun, and cooked by a fire-breathing dinosaur).
