Even if you couldn't taste the rich, baked-in flavor of the coal oven at San Giuseppe, you'd know it was there—after all, it's right in the dining room. Baking dishes at 800 to 1,000 degrees, the oven fills the room with a warm glow, a delicious smell, and, of course, pizzas made the old-fashioned way. Those pies are a tradition that goes way back in Chef Joe Russo's family, and those generations of honing the recipe have paid off—the Hudson Reporter called those pies a must-have, "no matter what else you may be tempted to order."
