Ever since Akai Ryu Shabu Sushi's owners opened their second-story eatery in Porter Square, they've drawn praise for their fresh, creative sushi rolls and appetizers such as the kaki fry. That panko-breaded oyster dish earned a callout on Zagat's 'Boston's 6 Hottest New Japanese Restaurants' list in September 2014. But the restaurant's biggest draw of all may be its shabu-shabu menu, which invites guests to try an ancient, hands-on cooking style.
To begin a shabu-shabu meal, diners choose from a variety of broths. Options range from rich porcini-mushroom broth to herbal chicken stock, which is said to possess healing properties helpful in fighting off a lingering cold or a case of the Mondays that's lasted an entire work week. Next, diners dunk savory morsels such as American wagyu beef and scallops into tabletop vats of the simmering broth, poaching each bite to flavorful perfection. Vegetarians can also indulge in the shabu-shabu experience by dunking ingredients such as taro root, tofu skins, and eight types of specialty mushroom.
