BA Texas BBQ
As a kid growing up in Texas, A.L. Payne was no stranger to barbecue, but that passing familiarity transformed into a full-grown passion when he became a teenager. The future restaurateur started hanging around his brother's rural barbecue restaurant, learning the ropes of slow smoking meats until they were tender enough to cry at the end of Old Yeller. But it took a move to Utah and a career in the financial industry to make Payne realize how badly he wanted to reconnect with his roots, eventually leading him to build BA Texas BBQ.
The restaurant acts as a Lone Star outpost in The Beehive State, serving up authentic Texas-style barbecue with a side of Southern hospitality. The pit master cooks classics from brisket and baby back rib platters to pulled pork sandwiches, but also branches out with culinary creations of his own—namely, the Chisket and Chork, a grilled cheese sandwich stuffed with brisket, pork, or turkey and bacon.
