"Howdy, y'all! Willkommen!"
That's a common greeting at Bavarian Brauhaus, which is the passion project of a native German, Ralph Richardson, and his Texan wife, Carrie. Both restaurant-industry vets, they finally decided to embark on their own enterprise by combining the unique cuisines of their respective hometowns. Ralph's mother taught him how to cook many of her cherished recipes, which he updated with Texas flavors. Bratwursts are ignited with jalapeños, and croquettes are transformed into Texas Tornados—fried mashed potatoes with bacon, peppers, and cheddar cheese.
Of course, food is only half the reason people come to Bavarian Brauhaus. There are lagers, pilsners, and hefeweizens, as well as darker beers such as Schneider Aventinus. In addition to beer, guests can order wines that are culled mainly from Germany and California.
