About Cafe Absinthe
When Cafe Absinthe's executive chef fuses French and American food, he does so artfully, preparing the dinner-only service with enticing presentation. At one table, a thick medallion of beef tenderloin might rest upon a cake of fingerling potatoes and forest mushrooms, and at another, an encrusted halibut filet might lean against garlic mashed potatoes carved into a flower. Not to be outdone by dinner, Pernod drip cocktails arrive topped with a flaming sugar cube, and the rhubarb cobbler is capped by a scoop of Bailey's ice cream and a derby hat that somehow works for it.
