When Cafe Absinthe's executive chef fuses French and American food, he does so artfully, preparing the dinner-only service with enticing presentation. At one table, a thick medallion of beef tenderloin might rest upon a cake of fingerling potatoes and forest mushrooms, and at another, an encrusted halibut filet might lean against garlic mashed potatoes carved into a flower.
