Under the tutelage of acclaimed pastry chef Susan Kolman, 20 or fewer students learn the ins and outs of pastry making before getting their arms elbow-deep in butter and flour in Classic Cooking Academy's commercial kitchen. The theme varies by session, and menus include four to six baked goods, such as scones, caramelized-pear shortcakes, and parmesan pine-nut biscuits. Students take home all of the delicacies they create. Classes take place Saturdays from 10 a.m. to 1 p.m. and start on June 9. See the full menu for each session.
Opened in 2007, Classic Cooking marches under the banner of using classic cooking techniques while using fresh, seasonal local produce and ingredients. French chef and owner Pascal Dionot directs his well-trained staff to help explain some of the finer points of cooking for both career-minded gastronomers and novices.
