During the gourmet cooking classes, the group splits up and each section takes charge of one part of the menu. The class kicks off with a demonstration, and then students follow their way through the recipes with help from the chef on hand. Once the food is ready, students take a seat while their meal is served to them with an included glass of wine. Alternatively, during the wine class, a sommelier spends more than two hours talking about wine and discussing pairings while a chef highlights the dishes served. The menu changes, but upcoming dishes include pan-seared salmon and lentils, petite fillet of beef au poivre, and frozen berry-and-cognac terrine paired with the likes of Angeline pinot noir and Saint Cosme rouge. Chef and owner Pascal Dionot draws on his training in France, Germany, and Spain to elucidate the finer points of cooking, dining, and tossing table scraps to puppies during cooking classes tailored for both career-minded gastronomers and novices. Catering services take Classic Cooking's French–Native American fusion on the road to feed handfuls of hungry partygoers or infinite imaginary friends.
