Cooking Greek's owner, Katherine Haidar, brings a passion for the traditional recipes of her Greek-born parents to educate students about Greek cuisine. Her hands-on, belly-stuffing classes teach eager pupils the secrets of her traditional Greek family recipes. Students learn to prepare entire meals—an appetizer, a main dish with a side, and dessert––at evening classes running 6:30 p.m.–9:30 p.m. During one-hour quickie classes, instructors teach guests to craft single dishes starting at 9:30 a.m., which cater conveniently to well-sunscreened vampires. Peloponnesian protégés will bring home recipes to re-create delicacies such as Greek salad, flaming cheese, moussaka, loukoumades, or Greek wedding cookies on their own.
During the night classes, Haidar also serves an in-class meal to her students to help them resist the temptation to wrap themselves in phyllo dough and roll through vats of honeyed walnuts in a baklava Bacchanalia. Katherine also brings that same dedication to authentic Mediterranean tastes to her adjoining eatery, where diners welcome plates filled with bites of roasted lamb, garlic, and eggplant. Many entrees are gluten-free; chefs infuse their signature lemon chicken with a blend of citrus and greek spices, and stuff dolmades with a wheat-free combination of rice, beef, and vegetables before tucking them into the oven.
