Now a seasoned restaurateur and businessman with four restaurants to his name, Ruben Gimenez’s foray into the world of dining kicked off with the opening of a single restaurant—Los Rancheros—in 1989. In the two decades since serving up his first fajita, Ruben has worked tirelessly to build a quartet of restaurants in Daphne and Mobile, delighting taste buds with platefuls of authentic Mexican food served up in dining rooms decorated with traditional south-of-the-border décor. Opened in 2008 and constructed to reflect the architectural traditions of the central region of Mexico, Don Carlos is the newest addition to Ruben’s gustatory empire.
Throughout the day, Don Carlos’s kitchen remains abuzz with chefs chopping up fresh chili peppers and whipping up batches of homemade salsas and chips for flocks of hungry lunch and dinner guests, as well as for breakfast-goers with broken alarm clocks.
