What You'll Do
Caribbean cuisine draws inspiration from the geography that surrounds it: fish from the ocean, citrus fruits from the equatorial groves, veggies from farmers markets. Sandra Shallow, a native of the region, guides students through a delicious journey as she teaches them to whip up a three-course meal.
Cook a Caribbean Meal
Learn to craft authentic Caribbean dishes such as curried chicken, stewed oxtail, and rice and beans, as well as macaroni and cheese and Southern-style collard greens.
Pair It with a Salad
Students also make a fruit-and-vegetable salad with a scratch-made dressing.
Savor the Finished Product
After the meal is made, enjoy the fruits of your labor with a homemade juice, such as lemonade, ginger beer, or sorrel-hibiscus juice.
Sandra Shallow sometimes feels she was born to cook. As a young girl on the island of St. Vincent and the Grenadines, she would wake up every morning and help her mother prepare meals for her family. The lessons and recipes she learned in those days are things she carries with her into her cooking classes and her catering jobs with the Emigre GourmetCatering Collective.
