The two-hour class starts with a tasting of raw cacao from different regions of the world. Students then load beans and other ingredients into a stone grinder, pour their chocolate bars into molds, and top them with their choice of toppings. At the end of class, students have a chance to sample the entire spectrum of Raaka’s chocolate bar line.

Raaka Chocolate

Far from a conventional candy shop, Raaka Chocolate is the gathering point of individuals whose passion for chocolate inspires them to develop new cocoa-processing methods, experiment with unheard-of flavor combinations, and teach workshops in their craft.

Co-founder Ryan Cheney discovered his calling at a yoga school in Thailand, where his first taste of unroasted chocolate left an unforgettable impression. After learning chocolate-making techniques, he paired off with co-founder Nate Hodges, a gastronomist who shared Ryan's passion for epicurean discovery. The two of them assembled a team of people with backgrounds in organic lettuce farming, microbiology, and oompa loompa linguistics. Then, they finally got grinding.

Today, the Raaka team ages cocoa beans in bourbon casks, sprinkles dark morsels with pink Himalayan salt, and infuses bars with chai—when they're not teaching chocolate-making classes, that is.
