Fruit Curd: A Spreadable Dessert

Compared to jams and jellies, which are simple mixtures of sugar, pectin, and fruit or fruit juice, fruit curd is a more complicated amalgam of fruit juice, butter, eggs, and sugar cooked to a thick pudding-like consistency. Perhaps the most popular curd is made with lemons, though almost any acidic fruit will do, from limes and blood oranges to passion fruit and raspberries.
High in fat and calories, fruit curd is often recommended in small doses—for instance, spreading a smidge on a warm scone, spooning a dollop over pound cake, or mixing a single drop into a 1,000-gallon vat of plain yogurt. It’s also often paired with the subtle sweetness of meringue in a pie—especially lemon curd, whose rising popularity some attribute to celebrity chef Mary Berry, who used it in an episode of The Great British Bake Off.
