Jared Leonard, Rub BBQ’s sage of smoking, fills minds and stomachs with his brand of barbecue by detailing every step from meat selection to menu planning during three-hour seminars. Cadres of 16 aspiring pit apprentices gather in Leonard’s modern teaching kitchen after studying an emailed syllabus that breaks down the evening’s events as well as suggested compliments their teacher would appreciate. Classes cover an extensive spread of barbecuing technique and theory, describing the subtle differences in regional styles and practicing techniques to add flavor and seal in moisture while in the smoker. As meats spend time in the fire, participants whip up homemade barbecue sauces and enough sides to make a four-course meal. Once the smoker has done its work, attendees savor the fruits and meats of their labor buffet-style, with brisket still piping hot from the oven’s kiss and ready to apply saucy smooch marks on contented cheeks.

Students gather in the newly added Pit Room, which features 1,000 square feet of kitchen equipment centered on a smoker. A large, stainless-steel worktable allows multiple chefs to ready their dishes, and a dedicated kitchen line ensures students aren’t assigned dishwashing duties from busy cooks on Rub BBQ’s line. In addition to full stomachs, students carry home three jars of Rub’s signature barbecue sauces and a miniature cookbook containing all dishes sampled during the course of the evening. Attendees can bring their favorite beverages to enjoy with the meal, and the class syllabus includes wine and beer pairings that bring out flavors hidden in the meats or camouflaged as napkin stains.
