For executive chef James Y. Park, every meal is an opportunity to experiment and make discoveries. The third-generation chef has sliced, rolled, and seared in the US, Japan, and Korea, launching numerous restaurants and collaborating with Iron Chefs along the way. His nearly three decades of artistry come together at Tokyo Sushi, where he crafts both classic and innovative dishes for discerning audiences with a wide array of tastes. Along with bento boxes and spicy California rolls, Park designs a selection of special signature dishes. He fills martini glasses with tuna, salmon, and white fish carpaccio, then sprinkles smelt roe on top. He stirs vegetables into chicken curry, and pairs shrimp tempura with wasabi aioli. He grills salmon, then fries it and tops it with a creamy mango sauce. No matter the dish, Park creates it with care and imagination.
