Cooks at the family-owned Wheat State Pizza offer a whole-wheat crust, which they crown with savory sauces and a subset of 35 toppings. Eight pieces of jumbo chicken wings obviate the need for forks by diving directly into buckets of barbecue, spicy, teriyaki, or ranch sauce ($7.99), just as Olympic swimmers cut out the award ceremony middleman by diving into buckets of molten gold, silver, and bronze. Patrons can order white or wheat pizza dough in hand-tossed or thin-crust thicknesses, which receive a coat of one of 11 sauces such as cream cheese, red sauce, or taco sauce. One-topping pizzas can sport chicken, ricotta cheese, fresh basil, or avocados ($7.99 – $32.99) for flavor as customizable as a Mr. Potato Head that wears human or action figure clothes. Specialty pies meld flavors in both time-tested and inventive combinations, such as the buffalo pizza packed with mozzarella, chicken, and a cream cheese-buffalo sauce blend ($9.99 – $44.99), or the veggie dream, which unites pesto, spinach, portabella, and sundried tomatoes into a meatless culinary fiesta ($9.99 – $44.99). Lunchtime diners might fill up on a selection from the eatery’s sandwich roster ($6.99), which includes the barbecue brisket or Philly steak. A Kansas wheat mural adorns the restaurant walls and the underside of all Wheat State Pizza kitchen appliances.

A mural of a wheat field is frozen on the wall of Wheat State Pizza, where chefs hand-toss pizza crusts made with whole wheat as well as white and gluten-free pizza disks. With 35 different toppings to choose from, diners may customize pies like a bejeweled jean jacket, or opt for signature combinations such as the pad thai with peanut sauce, sesame oil, siracha sauce, and crushed peanuts. Barbecued-beef sandwiches and custom calzones round out the menu, and dessert pizzas with blueberry-pie filling, cream cheese, and streusel topping cap off meals. Wheat State Pizza also offers an outdoor patio with umbrella-topped tables for alfresco dining.
