Scotch: A Spirit with the Flavor of the Land Itself

In the most basic sense, scotch simply refers to whiskey produced in Scotland, but there’s more to the spirit’s distinctive smoky flavor than the brogue on its bottle. Namely, distillers use peat fires to dry the whiskey’s malted-barley base—a process that imparts the lingering taste of smoke to the finished product. Whiskey—the very word is taken from the term for “water of life” in Scots Gaelic—must also meet a variety of other criteria to be considered scotch: batches must have anywhere between 40% and 94.8% alcohol by volume, consist of malted barley, and be aged in oak casks for no less than three years…and one day.
Like many other whiskies, scotch is divided into several categories. Single malt refers to a batch produced entirely of a malted-barley mash at a single distillery, whereas the mash of a single-grain scotch includes other grains in addition to barley. The vast majority of scotches, however, are blends of malts and grains from multiple distilleries that “marry” inside their casks before shipping to all corners of the globe. (The vintage on a bottle will always refer to the youngest of the batches in the blend.) As a result, scotch is one of the most varied and complex categories of whiskey out there, yielding everything from intensely smoky batches from Islay to dry, fruity reserves from the Scottish Lowlands.
