Though every slice of Neapolitan-style at Candelari's Pizzeria has a flavorful mix of toppings, there is something special about the slices that feature the house sausage. That's because chef Michael May—before learning how to craft the perfect pizza crust and cheese blend—spent years as a purveyor of specialty Italian sausages made with choice cuts of meat, spices, and hints of liqueur, living up to his nickname, "The King of Sausage". He now combines his two culinary passions, sausage and pizza, to create hearty New York-style pies.
When crafting his Neapolitan-style pizzas, he takes a page out of the history books, adorning them with classic Italian combinations such as extra virgin olive oil, Italian sausage, roasted grape tomatoes, and goat cheese. He doesn't just stick to tradition, though—he also tosses the thick, dense slices with more modern ingredients, such as the house andouille and Italian sausage. His famous sausages can also be found in other dishes, from traditional pastas to the sausage grinder sandwiches. To pair with these hearty meals, staff have curated a large list of wine that can match any palate or color of shirt.
