At a simple wood-slat food stand in the heart of Downtown, Chez Dodo's chef, Shyamal Ghanraj Dausoa, introduces his homeland's French, African, Chinese, Indian, and Creole flavors to the Pacific Northwest.
His stir-fried mine frire noodle dishes vie for diners' affections with lamb curries, dal fritters spiced with chili peppers, and dholl puri flatbread, a popular street food in Mauritius. He also creates golden-brown Shyamosas—samosas that are so big they can easily double as a meal or a satisfactory third lunch for a growing teenager.
