Taking its name from the Spanish word for desire, deseo showcases Contemporary Latin cuisine. The menu combines traditional Latin American ingredients with contemporary sensibilities, leading to creations such as the rainbow ceviche with white soy and pickled jalapeno or the wagyu hanger steak with papa criolla and argentine chimichurri. And what better to accompany the bold, fresh flavors of our Nuevo Latino menu than with an award-winning wine list devoted to balancing those flavors with the most exciting examples South American wines. Dining indoors, guests can enjoy “The Rail,” the counter surrounding the exhibition kitchen where from every seat, diners can watch chefs expertly prepare deseo’s flavorful ceviche dishes and even discuss the process to leave with culinary tips, tricks and inspiration. To enjoy al fresco dining with views of the Resort’s golf course and adjacent garden, dine at our communal fire table, “La Mezona,” a 28-foot custom-designed granite table that features a dancing flame at its center. Adding even more vibrant color, deseo showcases the works of Cuban-born artist Nelson Garcia-Miranda. A political refugee with a deep passion for Latino culture, Garcia-Miranda shares his love for his homeland with guests as he paints live in deseo’s Muddle Bar.
