Equally colorful sauces appear on each meticulously plated appetizer, entree, and dessert that leaves El Maya's kitchen. And the cuisine's flavors echo the restaurant's vibrant, borderline eclectic spirit. The queso fundido, for example, is a decadent portion of melted chihuahua cheese with a dollop of tangy goat cheese in its center, accompanied by a toasted, basil-tinged bread for dipping. The freshness of cilantro-pesto rice and wilted spinach complements the richness of the seared Atlantic shrimp in pistachio mole sauce, while classic chicken or steak enchiladas get the gourmet treatment thanks to a drizzle of mole poblano, mole rojo, and arbol tomatillo.
Even though El Maya is BYOB, the staff makes fresh batches of virgin margaritas and sangria every day. Diners can keep spirits high by ordering margarita mix by the pitcher and then adding a splash of their favorite tequila from home or borrowed from the blue agave exhibit of the nearest botanical garden.
