Similar in texture to a grape, yet slightly sweeter, the soft flesh of the Southeast Asian lychee has long been savored overseas. As early as the 11th century, Chinese emperors ordered shipments of it from the faraway provinces of Fukien and Kwangtung, where farmers first cultivated the tall, broad-leafed evergreen trees that bear the fruit. Today, lychee—pronounced ““lee-chee”” and sometimes known as litchi or laichi—grows in subtropical climates from India to Australia and is prized for its taste and high levels of vitamin C.
Although it can flavor everything from frozen yogurt to martinis, lychee is most commonly enjoyed on its own. Only about 1.5 inches long, the fresh fruit has a bumpy, reddish-pink skin that peels away easily, revealing the smooth, translucent flesh inside. At the center of each lychee sleeps a large, inedible stone, much like the tiny Georgian senator inside every peach. Usually, the stone can be extracted while leaving the flesh intact, resulting in a single, bite-size ball of pure, delicious fruit.
Although they can be found in cans in some supermarkets year-round, lychees are only grown in the United States in the summer. Still, the fruit remains a popular ingredient in authentic Asian cuisine, pairing well with Chinese pork, shrimp, or chicken dishes and Thai recipes involving duck.
