Fuego Bistro's menu brings together authentic Mexican eats from locally sourced ingredients to unearth rich, bountiful flavors. Each of the empanadas is lovingly swathed in a flaky puff pastry, stuffed with ground beef and cheese, and then forced to swim down a river of yucatan-barbecue sauce ($10). Seasoned chefs stuff the corn tortillas of eight signature tacos with sugar-cured cabbage, oaxacan cheeses, and homemade pico de gallo before piling on proteins such as grilled Angus sirloin, breaded tilapia, or slow-roasted pork shoulder ($10–$11 for two). The Angus short-rib burrito braised in cola, pineapple, and soy ($11) blends fruit and soda more successfully than Mountain Dew–fueled apple picking. Fuego Bistro's cantina-like atmosphere adds to the cuisine’s authenticity, inspiring patrons to imagine they’ve traveled to foreign lands or built a Zorro-themed rec room in a moment of weakness.
