Classic Japanese cooking and internationally-inspired fusion cuisine appear throughout the menus at both of Kiku's Tallahassee locations. To show their dedication to the restaurants' roots, the chefs cook familiar Japanese staples, such as pork gyoza and teriyaki-glazed chicken yakitori, and the sushi chefs assemble platters of traditional sashimi, nigiri, and rolls filled with everything from deep-fried octopus and chopped jalapeño to lobster tempura and avocado. However, the occasional bit of regional and international flair helps distinguish Kiku's selection of Japanese cuisine. Crispy squid legs arrive with Thai chili sauce for dipping and the sashimi pizza features seaweed salad, thin-sliced fish, and spicy mayo layered atop a sweet potato pie crust.
