The cooks at Lunchbox Eats assemble a menu of down-home sandwiches, salads, and sides, each with a school-themed moniker. Two cheddar waffles play Trapper Keeper for morsels of peanut-oil-fried chicken in the homeroom chicken and grids ($7.95); the triple-decker leadership mac & pork club sandwich ($9.95) packs in hickory smoked pork butt and house mac ‘n’ cheese between layers of white bread. Red-wine-braised beef short ribs mingle with gravy, stew veggies, and grilled cheese in the broken rib bones sandwich ($10.95) as sides ($2.29–$3.49) of sweet-potato hash, mac ’n’ cheese, and "Do you like me?" notes fill up smaller compartments in the cafeteria-style lunch trays.
