At one time, the space that holds Matsu Sushi instead housed a theater. Its high ceilings and lofted balcony towered over actors and audiences, not servers and diners. When Matsu's owners decided to open the restaurant in the space, they didn't try to change its look—instead, they played off the existing design, retaining the theater's grand aesthetic.
Happily, the food at Matsu Sushi is just as stately as the setting. Chefs slice premium fish for sushi and sashimi, including seasonal offerings such as o'toro—a cut of fatty tuna prized for its velvety texture, mouthwatering taste, and usefulness in creating crossword puzzles. Diners can also slurp simmering soups or watch as hibachi chefs flip lobster tails and juicy steaks through the air.
