When Eric J. White, a Phoenix police officer, needed a way to help fund his wife's dream of becoming a toy developer, he went out and bought an old van with the hopes of transforming it into an ice cream truck. Unfortunately, the day after he completed work on the truck, Eric met his tragic, untimely death in the line of duty. Crushed by this heartbreaking tragedy, his wife, Colleen, shelved the idea and let the truck sit dormant, focusing on raising her two kids instead. Years later, however, the gears of inspiration began churning again. And since her kids had since grown into self-reliant teenagers, she was free to restart Mighty Moo as a living tribute to the legacy of her loving husband.
Turns out, the handmade, small-batch ice cream was a hit. Colleen's success on the road led her the open a brick-and-mortar shop, which doles out floats, milkshakes, and banana splits amid comfortable booths and armchairs. She hasn't retired Mighty Moo's truck, though—it continues to refresh kids and adults of all ages at outdoor parties, games, and picnics.
