If you were to be strictly accurate, you might call it Pauls' Kitchen. There are two of them behind this much-anticipated spot: Paul Miller, owner of the Union Kitchen restaurants, and executive chef Paul Lewis from Osteria Mazzantini. Their shared pastime is keeping guests on their toes, thanks to a locavore menu that changes frequently. Using ingredients from purveyors including Blue Horizon Seafood and Houston Dairymaids, they've built meals such as pork shoulder with cilantro-lime crema and sweet-potato puree. Pastry chef Kelsey Hawkins has drawn fans with the dessert menu as well. Their menus reach to the far corners of the globe for inspiration, but they remain exceedingly user-friendly—a glossary acquaints diners with ingredients such as furikake and charmoula before their first bite.
Thanks to its pedigree, Paul's Kitchen attracted attention and remote-controlled the city's salivary glands early on, boasting a feature in the Houston Chronicle and a spot on Eater's list of the year's hottest restaurants. The Zagat-rated restaurant was also named one of the Hottest New Restaurants in Houston Right Now by Zagat. Despite the fancy platings and high-profile names, the ambience is laid back: pub-like inside, with a spacious patio outdoors that could almost host a modern barn dance.
