Any meat you order in Schaller & Weber today is of the same quality it had 100 years ago. But how? Well, this family-run meat shop holds to traditions Ferdinand Schaller started learning back in 1918. He began as an apprentice butcher in Stuttgart, Germany, eventually taking a spot as a cook's mate on a ship headed to the States. By 1937, his skills were so much in demand that he and talented butcher Tony Weber opened a shop together on the Upper East Side—and never looked back.
Just as Ferdinand and Tony were particular about quality back then, the staff today is picky about the ingredients they use for their own house-cured meats. With pork, they select the finest cuts of Canadian and Berkshire varieties and flavor them with all-natural, hand-blended spices. It's not a surprise, then, that you won't find any fillers, trans fats, or artificial ingredients here. Schaller & Weber's award-winning meats have even been honored with gold and silver medals at the Welser Fair in Austria, considered by many to be a higher honor than even Mom bragging about you to friends.
