Many of the restaurant’s sauces are made from scratch, including the coconut sauce coating the fried tilapia, and the three-cheese sauce featured in the lobster mac and cheese. The chefs also mix up their own rub for the jerk chicken, which is pan-seared under a brick to make it crispy and lure in hungry masons.
