A gold medal in a local wine show encouraged his efforts, so much so that he eventually founded Diletto Winery with his wife Jacqueline. Their lack of classical experience has led them to throw out the rulebook, making non-traditional spirits such as Apple Cider wine, Elderberry wine, and their regularly sold-out Banana wine. Perhaps not surprisingly, their pairings menu is a bit different as well, featuring foods such as brisket sliders and baked brie topped with bacon and butterscotch.
