Beard Papa's rise to bakery stardom began humbly in Osaka, Japan. The pastry chefs' Japanese spin on French cream puffs spawned a loyal crowd, who were devoted to the flaky choux-dough puffs' unique fillings, such as mochi and green-tea cream. Now, you can find the confectionary delights in 15 countries, due in large part to the bakery's blending of cultural culinary staples. They fill cream puffs with a range of jams, creams, and fillings—often Japanese-influenced—from vanilla bean to dulce de leche. Their most popular flavor, however, is the many iterations of green tea. They frost pastries with green-tea frosting and inject puffs with a blend of green-tea cream and black honey. Their experimentation extends to the green-tea Paris brest—a pastry that somewhat resembles a churro—filled with green-tea cream, which translates to "distilled happiness" in French.
