At The Republic Restaurant and Bar, Chef Augusto Lopez rounds up recipes for comfort food from around the globe and serves them up under one roof. He divides his menu among small plates, sandwiches, and heartier mains such as shrimp and grits with balsamic barbecue sauce and free-range chicken marinated with a specialty Colombian rub. At brunch, meanwhile, Alfonso puts his own stamp on breakfast classics by crowning pecan raisin french toast with banana foster custard, rather than hiring a notary public to stamp each forkful before you eat it.

To complement Alfonso's dishes, bartenders behind bars made from repurposed hardwoods serve top-shelf spirits, draft and bottled beer, and wine made entirely from organically grown grapes sourced from sustainable farms.
