For Madai Sushi's house specialty chefs add an imaginative twist to traditional sushi rolls: eschewing the traditional bed of rice, the rolls use hollowed-out cucumbers instead, creating a veritable planter with salmon and tuna as the flowers. But there are also plenty of traditional and fried rolls, too, stuffed with everything from barbecued eel and cream cheese to albacore tuna and cilantro. For dessert, the chefs deploy their battering skills to craft items such as tempura fried green tea ice cream with lychee.
