In sessions held every two weeks, vegan chef Jenny Ross shares the keys to a food style of her choosing—from raw food to tapas—in either a hands-on class or an informational demo. Each session culminates in a meal with at least three courses, consisting of recipes taught during the class. After January’s raw foods classes, for example, the menu will feature a supergreen smoothie, a kale salad, lemon pesto pasta and sushi.

Ringmastered by raw-foods guru Jenny Ross, 118 Degrees is a wellness-focused chain of vegan restaurants serving living cuisine prepared at 118 degrees or lower to lock in essential nutrients. The menu, populated with Italian-, Thai-, and Latin-inspired dishes, labels all nut-free items and dishes made with kamut, a high-protein, low-gluten grain. Each cheese on the menu consists solely of fresh herbs blended with sprouted nuts and seeds, allowing milk to be saved for donations to chocolate factories and preschool job fairs.
