Although he won a James Beard Award (and a spot on Top Chef Masters) for his elevated pizzeria and bar cuisine at Spiaggia, Chef Tony Mantuano never underestimates the power of a good slice of pizza. That's why he decided to open up Bar Toma, a Gold Coast hotspot specializing in wood-fired pies, delicious cocktails, and craft beer served in a lively space featuring hand-painted murals, exposed brick, and warm lighting courtesy of the pizzeria's two wood-fired ovens, Angie and Pauley. Located in the Gold Coast neighborhood of Chicago, just off Michigan Avenue, Bar Toma is a great happy hour destination for cocktail specials and signature appetizers. Like all of his dishes, the pizzas here begin with the best ingredients possible, ranging from cured pepperoni to smoked garlic to whipped ricotta. Chefs transform these delicious building blocks into signature pies like the Burrata, which features a simple combination of brussels sprouts, truffle oil, and creamy burrata cheese.
But the ingredients are only part of the equation. What really sets Bar Toma's pizzas apart are their crusts. Chef Mantuano's staff allows each batch of dough to rise for a full 48 hours before baking it in one of the kitchen's two wood-fired ovens, which they lovingly nicknamed Pauley and Angie. This patience pays off with an exceptionally light and crispy crust—one that's so good it led Food and Wine magazine to place Bar Toma on its list of the Best Pizza Places in the U.S.
