Brick and Barrel
Brick and Barrel's brewers combine the wonders of science and artisanal finesse. The former exists as four fermentation devices, including three 7 barrel fermenters and the three and a half barrel named R2D2; however, C-3PO is nowhere to be found. While the tanks provide the fermentation, owner and brewmaster Karl Spiesman accounts for the craft. Karl approaches brewing with a workingman's ethic and crafter's sensibilities, a balance he attributes to Cleveland's blue-collar character and his experiences making beer and wine in Sonoma and around the Pacific Northwest. Here are some beers you might see at Brick and Barrel:
Bitter Chief IPA: A loving, albeit bittersweet, nod to the Cleveland Indians, this cold-stabilized beer boasts piney, citrusy flavors and a malty finish (6.9% ABV).
McTavish Wee Heavy Scotch Ale: A dark ruby brown, big malty Scotch Ale. Flavors and aromas of dark caramel, cherries, biscuit and roasted bread. Balanced malty body and a nice roasted finish (9.0% ABV)
Cleveland Dark Ale Cask: In the style of Cascadian dark ale, the Cleveland cask includes hoppy flavors and a chocolate finish (7.3% ABV).
