What You’ll Do
Deeply fragrant and rich with spices, masala chai is a staple drink in some cultures. Although today varieties are available in powdered form or ready-to-steep bags, true masala chai comes from a time-tested, multi-step brewing process. In her one-hour workshop, Umi Patel demystifies this process in order to expand the base of chai fans.
Know the Chai
By sharing videos and her own personal experiences, Umi shines a light on the origins of the chai tradition and explains the importance it has in many households.
Brew the Chai
Umi guides the tea’s traditional preparation, mixing black tea leaves with green cardamom pods, cinnamon sticks, ground ginger, and peppercorn.
Drink the Chai
Get to know your fellow participants over steaming mugs of masala chai and Indian snacks before taking a recipe card home.

“I bleed masala chai,” says Umi Patel. Raised in England by Indian parents, she finds the potion serves as a daily source of both deliciousness and nostalgia—not to mention caffeine. While her life and career have taken her to New York City, Umi still cherishes the chai recipe she learned from her parents and tea makers in India, and gets as much joy from sharing it with others as she does from drinking it.
