Though he was raised in Venezuela, Chef John Borras's family hails from Catalonia. Thus from a young age his elders taught him the tradition and techniques behind Spanish cuisine. In that spirit, his menu for Macarena Tapas St. Charles is an homage not only to classic Iberian dishes, but also to his relatives' specific recipes. Omelets are made according to his grandmother's instructions, studded lovingly with onions and Spanish potatoes. Some dishes are more modern, though, such as crab cakes topped with Asian slaw or wagyu sliders spiced with piquillo peppers.
Chef John's Catalonian roots reach deeper than the food menu to a thoughtfully curated list of Spanish wines and sangrias. Even the decor reflects his heritage, as vintage Spanish chandeliers shimmer over tables made from reclaimed barn wood and chairs made presumably from something that can be sat on.
