"Pao is not just a restaurant," says the New York Times, "it's a cultural mission, an attempt to expose New Yorkers to Portuguese culture." And while doing so, it makes sure people take notice. When traditional pre-meal pão—Portuguese for "bread"—arrives at the table, it arrives in a ceramic flowerpot. When people survey the menu, they do so by looking through the glass of a picture frame. The appetizers supplement this quirkiness with their own full-out spectacle: servers set the linguica asada com aguardente's sausage aflame right at the table. This preempts entrees of roasted duck or seafood such as baked octopus or cod cakes.
All that's left to complete the tour de Portuguese cuisine is a glass of vinho verde: green (or young) wine from the Minho region of Portugal. Occasionally, live music sets the mood in Pao's intimate dining room by tuning all the senses to the Iberian Peninsula.
