During each two-hour class, groups of up to 34 students convene to learn the art and science of DIY cheesemaking. Each guest concocts one pound of mozzarella cheese using locally produced, hormone-free milk, and may use their $5 credit toward the purchase of other artisanal cheeses ($5+ for 1/3 lb.) or cheese-making supplies such as cheese cultures and rennet ($6.95+). Classes are held three times a day on Saturdays and Sundays. Participants should dress in casual clothes or full-body chocolate-chip cookies, since they may be splattered with fresh, creamy milk.<p>
