Flights of wine and flights of beer are commonplace at restaurants across Chicago, but a flight of waffles is a truly sweet surprise. That’s exactly what diners find at Waffles Cafe. The flight’s parade of miniature waffles starts with the red velvet waffle topped in strawberry compote and moves on to the green tea waffle with its ginger Chantilly cream. Spicy cocoa powder and shaved dark chocolate distinguish the mexican chocolate waffle, before the tour de flavor ends in the café’s signature liege waffle. This specialty is made with pearl sugar, which caramelizes as the batter cooks. Of course, each of these waffles can arrive on its own—or stuffed with apple pie filling upon request. The menu doesn’t focus entirely on sugar, either. It also features waffles topped in pork shoulder and poached eggs, as well as chicken salad sandwiches on a choice of toast.
Waffles Cafe’s team adds a few complementary touches to this core menu. They squeeze fresh juice and brew flavored hot chocolate (flights of which are also available). They’ve even paid attention to the decor. Sure, it might seem like a standard café at first, but upon closer look, diners findthat the tables are topped in chalkboard—the perfect place to draw a side of bacon and wish it into reality.
On the Bun
You won’t just find all-beef franks and burgers on the menu at On the Bun. Instead, grillmasters cook up a range of exotic meats, from their hearty bison burger to their pork-jalapeño-cheddar sausage. Chefs can blend together meats to create cohesive flavors, as in the case of the blend burger’s veal and chicken patty with spices, or can swap out meat completely with their black bean burgers. And for those looking for meals that are both vegetarian and gluten-free, chefs even have a burger for them. They top a gluten-free bun with a patty made from quinoa, mushrooms, zucchini, shallots, and gluten-free bread crumbs. All of these burgers come topped with lettuce, roasted tomato spread, and a choice of house sauces and toppings. These include spicy options such as the chipotle cream or popular fried eggs.
