Husband-wife team Colby and Megan Garrelts met in Chicago at the five-star, five-diamond TRU. After traveling to Las Vegas and Los Angeles, the culinary duo opened Bluestem Restaurant, using it as launch pad for their explorations into progressive American cuisine.
