An eclectic menu combines American dishes with French flourishes. Entrees include steak diane, pan-seared duck breast, chicken marsala, and braised lamb shank. Two entrees may be substituted for the Chateaubriand for Two: a 16-oz. marinated beef tenderloin charbroiled and topped with shallots flamed with cognac.
There's a lot of diversity on the menu at The Riviera, but one thing you won't find is deep-fried food. Instead, the cooks grill, sauté, bake, and braise a menu with culinary influences from around the world.
