Choose Between Two Options

  • $99 for an absinthe class and tasting for two (a $225 value)

Bartenders begin by preparing Pernod absinthe—based on the original recipe—in the classic French manner by louching ice water over a sugar cube. A flight of three tastings follows and includes a sampling of Kubler and St. George's Absinthe Verte. While students get acquainted with the green fairy, instructors expound on methods of production, wormwood's hallucinogenic properties, and the historic events that led to absinthe's infamous ban. Bartenders also mix up three absinthe cocktails known as The Last Word, Sazerac, and Arsenic and Lace. Instructors conclude the class by discussing the challenges posed by this 100–150-proof spirit as complimentary gourmet cheese and crackers offset its inspirational qualities.

Classes start August 8, 2013 and take place on Tuesdays from 6–8 p.m. and Fridays 5–7 p.m.


Skilled mixologists serve up complex drinks at Wisdom, a dark yet charming cocktail parlor where heavy draperies and ornate lights hang along exposed brick walls. Their drink menu runs the gamut from wine and imported beer to a vast selection of authentic absinthe. Bartenders also mix up non-alcoholic "mocktails," with flavor profiles that are as interesting as their alcoholic counterparts. Events such as trivia night pit martinis against memories, and yappy hours let dogs lounge on the patio and play poker while owners sip libations. Wisdom also dishes up tasty tidbits such as chocolate beer waffles doused in maple syrup or bacon waffles covered in bourbon and caramel apples.
