What sets ToScanys' pizza apart is its practices in the back of the kitchen. To bring out the full flavor of their pizza sauce, the chefs use Italian plum tomatoes which leave very little citric acid in the pizza and manages to stay bright red after baking. Even their water is filtered separately for each of its different possible destinations: dough, soda, coffee, and tea. And of course, their pizza gets special treatment as well. Each pizza goes through a custom-built anthracite coal oven, whose intense heat imparts a subtle, smoky flavor to the crust but also leaves the toppings al dente. That helps elevate the flavors of signature pies like the pepperoni classico or chicken bruschetta pizza. The restaurant also serves other Italian comfort dishes like meatball sandwiches, caprese wraps, and of course, pasta.
