Piccadilly Artisan Creamery's staffers don't just scoop up creamy mounds of organic ice cream from a freezer case—they actually make the ice cream to order in front of the customer. Though it sounds like it would be as painfully time-consuming as watching a slide show of your parent's old vacation photos, the process is actually very quick. That's because Piccadilly Artisan Creamery relies on liquid nitrogen to make ice cream on the spot.

Liquid nitrogen freezes the ice cream in record time while minimizing the size of ice crystals, resulting in a creamier, smoother ice cream. It's safe to consume because it completely evaporates during the freezing process.

Though they employ such a high-tech process, the ingredients that go into their ice cream are anything but. Piccadilly Artisan Creamery uses only organic milk and cream that are free from pesticides, preservatives, and coloring and brought in from local farms. To create vegan flavors, it uses organic coconut milk.
