The chefs at Momo create the restaurant’s signature sauce through a painstaking process of baking roma tomatoes until their skins nearly crisp and then blending them with ginger, turmeric, and other spices. The zesty orange result tops momos—small dumplings from the Himalayas—whose wonton exteriors envelop turkey or pork with vegetables such as cabbage, onions, and cilantro. Samosas, curry chicken salad, and gluten-free rice bowls help round out the menu.
