Jason Balestrieri, executive chef at Cantinetta Luca, turns his attentions from Italian cuisine to classic American food in the kitchen of 400 Degrees Gourmet Burgers & Fries. He and his cooks hand-sculpt patties of Black Angus Chuck and skirt steak, sear them on a custom cast iron griddle, and serve them on toasted brioche buns. Diners can augment these with toppings such as pickled onions or buttermilk blue cheese, or opt instead for an albacore tuna burger or a veggie patty with eggplant-miso spread. Options for libations include handmade sea salt caramel shakes, craft beers, and wine. 15-foot windows and Artemide light fixtures lend the space an open, modern ambience.
