Tucked into the Paris Hotel on the Strip, HEXX's dining room and patio overlook the Bellagio's dancing fountains, which sway hourly to pop tunes and Frank Sinatra ones alike. Learn about how chefs make chocolate. With their bean-to-bar philosophy, chefs transform cacao beans from far-flung locales in six different countries —Ecuador and Tanzania among them—into chocolate.

It's open from 6 a.m. until mid-night. Early riser or a night owls fuel up at HEXX at until mid-night, including eating waffles in the morning hours or a choice of classically cut or well prepared steaks.

The menu has international flavor such as spicy chilaquiles, corned beef hash, and cinnaroll waffles on brunch. In the evenings their steakhouse dinner menu brings classic cuts of natural beef and seasonally inspired entrees.
